FILLING + HEALTHY
Easy, healthy and only 3 ingredients. This recipe is great to have on hand and are perfect the next time you make tacos, enchiladas or other types of wraps.
Chickpeas are high in protein and contain minerals and vitamins like copper, magnesium, zinc, and fiber.
Tapioca is also a rich source of dietary fiber, “good” cholesterol, and protein. Tapioca contains members of the vitamin B-complex, including pantothenic acid, folate, and B6, as well as iron, manganese, and calcium.
1 cup chickpea or garbanzo bean flour
1/2 cup tapioca starch or flour
1 cup coconut or almond milk
1. Blend flours in a bowl.
2. Whisk in milk until you have a thick, pasty batter.
3. Pour 1/3 cup batter into non-stick pan or cast iron skillet.
4. Cook on medium heat 2-3 minutes on each side until dark brown spots appear.
If you’re looking to use these in a savory recipe you can always add some garlic. On the flipside, you can make these sweet and a little vanilla extract or cinnamon.
