Pasta (Ancient Harvest POW! – Green Lentil Spaghetti)
1 tbsp extra virgin olive oil
3 garlic cloves, minced
dash cayenne pepper
1 can coconut milk or cream
1/2 cup cashews (soaked)
1 tbsp lemon juice (1/2 lemon)
1 tsp ground ginger
2 cups spinach (or half arugula)
1/4 cup fresh basil or cilantro (optional)
salt and pepper to taste

Method

Cook the pasta according to package directions. The key is not to overcook the gluten-free Pasta.

Cook the minced garlic and cayenne pepper with olive oil until golden brown. Add the coconut milk, lemon juice, ground ginger and pepper and cook over medium heat for 5 minutes. Do not boil or overcook the milk. Transfer ingredients to a blender and add the greens and cashews. Blend until smooth.

Drain the pasta and pour it into the pan with the sauce and mix them. You can cook both for 5 minutes more for a more intense flavor. Stir fry some veggies and top with Follow Your Heart diary free parmesan.

Veggie Stir Fry

1/4 cup cherry tomatoes (or veggies of choice)
2 tbsp cashews, chopped
pine nuts
1/2 tsp black sesame seeds
basil

Cook over medium heat in olive oil until cooked.
