A perfect parfait cashew superpower. This recipe is easy to make and can double as a healthy breakfast or anytime sugar cravings.

Cashews are a good source of healthy dietary fats. A powerhouse of proteins and essential minerals including copper, calcium, magnesium, iron, phosphorus, and potassium.

MADE WITH

1 cup raw cashews
3/4 cup almond milk
1 tbsp maple syrup
1/2 lemon squeezed
1/4 tsp vanilla extract
1/4 tsp cinnamon
5 pitted small dates
pinch sea salt

Berries

1/2 cup frozen raspberries or blueberries

Toppings

chia seeds
coconut flakes
fruit
agave
granola clusters
cacao nibs

METHOD

Thaw your berries for 10 minutes. Soak cashews and dates in hot water for 20 minutes or cold water for 3 hours. Drain cashews and place in a blender with almond milk, maple syrup, dates, vanilla, cinnamon, lemon, and salt; purée until smooth in high powered blender. Put your half-thawed berries in the cashew cream and pulse once. Chill and serve. Freshness will last for 2 days in the fridge, but best if consumed fresh.
